Nixtamal every night, pressed to order every morning
Dried corn simmered with lime and left to stand overnight, milled at dawn, pressed as you order. It is slower than buying flour, and it is the only reason the tortillas taste like corn.

Trays of carnitas, a comal on site, and enough masa for fifty. Two weeks’ notice.

We train on the comal. No experience needed, only a willingness to start early.
